Pickled Eggplant

花壇畑からナスがひとつ取れたので、何に使おうか迷ったあげく(だって1個だけだし)、結局きゅうりとにんじんと混ぜて浅漬けになりました。

えぇ、日本からのオットへのお土産は、各種浅漬けの素だったのです(笑)
この後夏場はずっと浅漬けだな。
やっぱりこういうインスタントな素があると簡単でいいね~~~。
Asazuke Mix
We got an eggplant from the vegetable garden. But only one. And it is a Japanese eggplant, so it's much smaller than the American eggplant.
After the Man of the House's failure of so-called "eggplant bacon," the precious eggplant was turned into a mix-veggie pickle using the pickling mix.

The type of pickling we do with the mix is super easy. Typically, just sprinkle the granulated mix over the veggie and in 20 minutes, it's done.
It's called "asazuke" so technically not quite pickling; no brine or vinegar required.
